Jaillance Clairette de Die
A couple weeks ago we visited the Southern Rhône Valley in France, near the Clairette de Die region. So I wanted to pick up a local wine, and in the end, I found the Jaillance Clairette de Die. The Clairette de Die is the sparkling wine from the area around the city of Die. Made with Muscat Blanc à Petits Grains and Clairette grapes.
The Clairette de Die is made through the Méthode Dioise Ancestrale, this differs slightly from the Traditional method that we know from for instance Champagne and Cava. In the Méthode Dioise Ancestrale the grapes first have a partial fermentation in refrigerated tanks. After that fermentation, the wines are blended the semi-fermented juice (4-5% alcohol) is bottled without the addition of liqueur de tirage. The residual sugars and yeasts contained within the grapes allow the fermentation to continue in the bottle. The wine is placed in a refrigerated cellar where it will stay for 6 to 12 months. The pressure inside the bottle halts fermentation naturally before all the sugar has been converted. After the fermentation is finished the wines are disgorged and topped up without any addition of liqueur de tirage.

My notes:
This Clairette de Die is right from the start very sweet. Apple, apricot, honey, orange, pear, lychee, marmalade and mango. Even a touch of strawberry and raisin. This was a delicious sweet and sparkling wine matching perfectly with a nice dessert.
