Via Caritatis Vox Domini Ventoux Rosé 2019

As we’re still following the Tour de France we thought it would be nice to continue with some French reviews. This week we even have a wine from a region familiar to our cycling fans, Ventoux, the mountain that is, unfortunately, no part of the Tour this year.
Now looking at the wine, this Rosé is created using both Grenache (90%) as well as Syrah (10%) grapes. The Grenache is there for the boldness and ageing qualities, and the Syrah for the freshness.
The harvesting is done when the grapes are mature, followed by the pressing which is done directly at low pressure and using a cold fermentation of all the mush and then the vinification process is done in concrete tanks at low temperatures.
It is aged on thin layer of lees with batonnage style stirring during 6 months.
